

June 1- Mon -World Milk Day

We had chocolate milk with cookies.
June 2- Tues -National Rocky Road Ice Cream Day

We bought some Rocky Road Ice Cream at our local grocery store.
June 3- Wed – National Egg Day (Baked Egg Wraps)

Ingredients:
- 8 Tortilla Shells
- 6 Eggs
- 2 TBS milk
- Baby Spinach
- Chopped Onion
- Minced Garlic
- Shredded Cheese
- Cooked Ground Sausage
- Real Bacon Bits
- Salt, pepper, garlic powder, etc
Directions:
- Preheat oven to 350 degrees Fahrenheit. Spray a muffin tin with non-stick spray.
- Stack 2 tortilla shells and roll them up. Cut the roll into 4 pieces and put them in the muffin tins.
- Mix the eggs, milk, and spices in a bowl. Pour a little egg in each tortilla shell.
- Place vegetables into the egg.
- Add the cheese and meat.
- Bake for 20-25 minutes, until egg is cooked all the way through.
- Cool in muffin tin for 5 minutes.
June 4- Thurs – National Cheese Day

June 5- Fri – National Gingerbread Day


Ingredients:
- 3 cups flour
- 3/4 cup melted butter
- 3/4 cup sugar
- 1/2 cup molasses
- 1/2 cup water
- 1 tsp baking soda
- 1 tsp ginger
- 2 tsp cinnamon
- 1 tsp salt
- 1 egg
- White Chocolate Chips
- Chocolate Melts
Directions:
- Combine all ingredients in a medium mixing bowl. Once dough begins to form a ball in the center, dust generously with flour.
- Cover dough with plastic wrap or wax paper and chill for at least 4 hours, or overnight.
- Dust a smooth surface with flour, and roll out a section of the dough to about 1/4 inch thick.
- Use a gingerbread man cookie cutter slice out your cookies. Place on parchment paper on a baking sheet.
- Bake at 350 degrees Fahrenheit for 10-12 min.
June 6- Sat – National Applesauce Cake Day


Cake Ingredients:
- 1/2 cup soft butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 teas vanilla
- 2 cup flour
- 2 teas baking powder
- 1 teas baking soda
- 1 teas cinnamon
- 1 teas salt
- 1/2 teas nutmeg
- 1/2 teas ground clove
- 2 cups cinnamon applesauce
- 1/2 cup milk
Cinnamon Cream Cheese Icing Ingredients:
- 8 oz cream cheese
- 1/2 cup soft butter
- 3 cups powder sugar
- 2 tbs heavy cream
- 1 teas vanilla
- 1 teas cinnamon
- 1/4 teas salt
Directions:
- Preheat oven to 350 degrees Ferenheit. prepare a 9×13 baking pan with nonstick baking spray.
- Mix the cake ingredients one by one, mixing after each ingredient is added.
- Bake for 30 minutes and cool completely before icing.
- Mix the icing ingredients one at a time, creaming well after each ingredient is added.
- Add the icing to the cooled cake.
June 7- Sun – National Chocolate Ice Cream Day

June 8- Mon – Jelly Filled Doughnut Day

We got some jelly filled doughnuts at our local doughnut store this morning.
June 9- Tues – National Strawberry Rhubarb Pie Day


I used the strawberry rhubarb pie recipe from The Garden Style blog.
June 10- Wed – National Iced Tea Day

We always keep a pitcher of Lipton Iced tea in the refrigerator. I make it by stewing the teabag in some warm water and then adding 2 cups of sugar to the pitcher.
June 11- Thurs – Corn on the Cob Day


The girls LOVE corn on the cob. I made it in the air fryer this time, 400 degrees for 10 minutes. Then we add a bit of butter and salt.
June 12- Fri – National Peanut Butter Cookie Day (Peanut Butter Blossoms)

Ingredients:
- 1/2 Cup butter
- 3/4 cup brown sugar
- 1/4 cup sugar
- 3/4 cup peanut butter
- 1 egg
- 1 teas vanilla
- 1 1/2 cup flour
- 1/2 teas baking soda
- 1/2 teas baking powder
- 1/4 teas salt
- 24 Hershey’s Kisses
Directions:
- Mix in the ingredients one at a time (except the Kisses).
- Chill the dough for 30 minutes.
- Preheat the over to 350 degrees Ferenheit. Prepare 2 baking pans.
- Get a small bowl of sugar and roll 1 inch balls in the sugar before placing on the baking pan.
- Bake for 8 to 10 minutes then immediately press the unwrapped kiss in the center of each one.
- Cool for 5 minutes before removing from the pan.
June 13- Sat – National Cupcake Lovers Day

We just got some gourmet cupcakes today.
June 14- Sun- National Strawberry Shortcake Day


Cake Ingredients:
- 1 cup flour
- 2/3 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 1/3 cup butter softened
- 1/2 cup milk
- 1 egg
Strawberry Ingredients:
- 2 cups strawberries hulled and sliced
- 2 tablespoons granulated sugar
Whipped Topping Ingredients:
- 2 Cup whipping cream
- 1 tea vanilla
- 1/4 Cup powder sugar
Instructions:
- Start by preparing the strawberries. Add sliced strawberries to a bowl and sprinkle them with sugar. Stir to combine. Let them hang out on your counter for about 2 hours and they will create a delicious juice. I recommend stirring them every half hour or so.
- Next, preheat your oven to 350 degrees F.
- Spray the shortcake molds generously with baking spray. Then, add some all-purpose flour to the molds, shake it around, and discard the excess.
- The next step is to whisk together the flour, sugar, baking powder, and salt in a large bowl. Then add the vanilla, softened butter, milk, and egg. With an electric mixer, beat on medium speed for about two minutes.
- Divide the batter evenly among the prepared shortcake molds. Each mold should be about three-quarters full. In case there are any drips, set the pan on a baking sheet while spooning the batter into the molds. Then place the shortcake pan in the preheated oven.
- Bake the little cakes for 18-20 minutes. Allow the cakes to cool completely in the pan before attempting to remove them. Gently loosen each cake with your fingers: then invert the pan to release the cakes.
- While the shortcakes cool, prepare the whipped cream.
- Add the heavy whipping cream, sugar, and vanilla to the bowl of a standing mixer fitted with the whisk attachment.
- With the mixer on medium speed, whip the cream until it begins to thicken.
- Continue whipping for several minutes until the cream is fluffy (medium peaks) but not too firm.
- Spoon a generous amount of the strawberries and juice on each shortcake. Top with a dollop of Homemade Whipped Cream.

June 17- Wed – National Root Beer Day (Root Beer Float)

We mixed our root beer with the vanilla ice-cream to make the root beer float.
June 18- Thurs – International Picnic Day

Picnic day with sandwiches and fresh cherries.
June 19- Fri – Eat an Oreo Day

Of course they both love Double Stuffed Oreo‘s too.
June 20- Sat – National Vanilla Milkshake Day

Ingredients:
- 1 Cup vanilla ice cream
- 1/2 cup whole milk
- Whipped topping
- cherries
Directions:
- I blended the ice cream and milk in my Smoothie Mixer.
- Then top with whipped topping and a cherry.
June 21- Sun – National Peaches ‘N Cream Day


Ingredients:
- 4 ripe peaches
- 1 teas lemon zest
- 4 TBS sugar
- 1/4 cup heavy cream
- 1 teas vanilla
- Pinch of salt
Directions:
- Slice the peaches into half inch wedges and peel the skin off.
- Mix the peaches with the lemon zest and 3 TBS of sugar and set aside.
- Use a hand mixer to mix the 1 TBS of sugar with the heavy cream and vanilla.
- Whip until fluffy but not too firm.
- Pour peaches evenly into cups including the juices.
- Spoon the whipped cream on top of them and chill for at least an hour.
June 22- Mon – National Onion Rings Day

We got frozen onion rings today and put them in the air fryer.

June 25- Thurs – National Strawberry Parfait Day

Ingredients:
- 1 quart of strawberries
- 2 TBS sugar
- 2 cups Graham Cracker Crumbs
- 4 TBS melted butter
- 12 ounces soft cream cheese
- 14 ounces sweetened condensed milk
- 2 teas vanilla
- 8 oz Cool Whip
Directions:
- Wash and slice the strawberries. mix with the sugar and set aside.
- Mix the cracker crumbs and butter.
- Whip together the cream cheese, sweetened condensed milk, vanilla and half of the Cool Whip with an electric mixer.
- Layer 2 heaping tablespoons of cream cheese mixture in the bottom of the cups, then 2 heaping tablespoons of cracker crumbs, and the 2 heaping tablespoons strawberries. Keep layering until you run out of each and top with a dollop of Cool Whip.
June 26- Fri – National Chocolate Pudding Day

We just made Jell-O Chocolate Pudding today.
June 27- Sat – National Ice Cream Cake Day
Ingredients:
- 8 oz. Cool Whip
- 8- 10 Ice Cream Sandwiches
- Creamy Milk Chocolate Icing
- Ice Cream
- Whipped Topping
Directions:
- First I added a layer of Cool Whip in the bottom of a 9×13 baking dish.
- Then added the ice cream sandwiches.
- Next I melted the icing and poured it on top of the sandwiches.
- Then scoop ice cream on top of that.
- Fill in the holes with whipped cream.
- Freeze over night and then cut and enjoy.

June 29- Mon – National Waffle Iron Day (Confetti Waffles)

Ingredients:
- Pancake Mix
- Sprinkles
- Whipped Cream
Directions:
- We prepared the pancake mix and poured it onto the waffle maker and then added the Sprinkles before we closed it.
- After they came out, I added a dollop of Whipped Cream and more Sprinkles.
June 30- Tues – National Ice Cream Soda Day
